Meet Miriam

Meet Miriam

Miriam Ayala is our new Edit, meaning she replaced Edit Tatar, the HOA Manager last year after Edit left to be married. Funnily enough, Miriam and Edit are friends; Miriam went to high school with Edit’s new husband, Rodrigo. Miriam was born in nearby Villa Union and her parents still reside there.  Her younger brother, “INSERT NAME HERE”  travels into Mazatlan daily to attend high school. At age 33, Miriam has seen a good part of the world. She spent her last year of high school as an exchange student in Taylorsville, Utah where she saw snow for the first time. She was tempted by the ski slopes but found her comfort level in the ski lodge, as much as she likes the outdoors.  Miriam is an avid runner and loves a good climbing wall, an amenity that Mazatlan has yet to develop. After graduating from University with a degree in Industrial Engineering, Miriam lived in Guadalajara for two years and worked for a pharmaceutical company. But the travel bug bit her again and she was off to London to continue her studies.  Returning to Monterrey, Mexico, Miriam worked for a global pipeline pipe manufacturing company, Tenaris, and her job took her to many places including Argentina. She found that her passion was International Commerce so she quit the pipeline job and went to Barcelona to finish her Master’s Degree. During this time she traveled to Germany, Austria and Italy. Then two years ago, she returned to her home town and began a construction company. ”     INSERT NAME OF COMPANY HERE” and manufactured cement building blocks, just as the recession hit, severely reducing the demand for advanced block technology. So Miriam took Edit’s old job and is now in charge of the financial operations of all sub-regiemes. She oversees all the common areas, pools, landscaping, dues and complaints.  She is our personal connection with Concord. Miriam loves a challenge and she loves working hard. I’m sure you will see her zipping around the property in her golf cart or pouring over spread sheets. You’ll know who she is by her big smile.

Olga Luna, Phase Two HOA Representative

Olga is a Maztaleca, meaning she was born and raised in Mazatlan. She is married and has two grown daughters aged 22 and 25. She attended high school in Mazatlan and University down in Nayarit, near Puerto Vallarta majoring in Tourist Administration. She has been with EDM for 4 years and is the only HOA Manager that Phase two has ever known. Previous to her employment at EDM, Olga worked for El Cid, Sheridan Hotels in Guadalajara, Sea Garden and Paraiso del Mar here in Mazatlan. As an only child, her parents were sad to see her leave Mexico after graduation to go to Montreal, Canada. She had no specific plans when she left but she spent a year there, living in the YWCA and studying both English and French. She has very fond memories of Montreal and hopes to visit there again soon. Her passion is art and architectural drawing. When her daughters were small, she attended architectural school for 6 months but was unable to complete the course. But both of her daughters were inspired by her passion and they both are architects today; the older one lives in Belgium and the younger, here in Mazatlan. Olga is a very good artist in her own right. She prefers working in acrylics when she is not doing line drawings. Her husband is a real estate agent in Mazatlan. To all you Canadians, help Olga practice her French. Bonjour!!

Fish Recipes

Fish Recipes

Due to the abundance of fish in my kitchen, I have tried a couple of new recipes lately. The first was given to me by Mary Sanz. It’s called Buttery Fish and it is now included in the “iQue Sabroso!” section of the website as well as by clicking here.

The second is Mary Beth’s Shrimp and Sausage Stuffed Poblanos. I substituted bacon and fish and it was wonderful!

By the way, the cookbooks are almost ready. I have five sets of recipes printed out and as soon as I can get to town for dividers and sheet protectors, I will be ready for a cook book stuffing party. If you would like one of the extra five cookbooks, please let me know ASAP. Just the cover is $25. Contents are extra.

Turtle Update

Turtle Update

I spoke with Erendira last week and she indicated that our Mama turtle, whom I have nicknamed “Lolly”, laid 119 eggs on December 10, 2011. Her eggs are safely incubating in the EDM Tortugero facility and Erendira has promised to inform us when her babies will be released. The incubation period is normally about 2 months, although lower temperatures may increase that time, so that would put the release sometime in February. Normally, hatchlings wait just below the surface of the hot sand and emerge at sunset or even after sundown. This allows them to avoid marauding predator birds. If you ever find baby hatchings struggling on the beach, simply pick them up and return them to the tortugero where Erendira will care for them.
